Orange Ricotta Muffins

Recipe Boy is a blog I follow.  I follow his mom, Recipe Girl and I think its pretty neat her 11 (?) year old son has his own blog about food as well so I follow it.  It is fun to see such a young writer maneuver his way around a blog.  The other day Recipe Boy, aka Brooks, posted these muffins.  I thought they looked delicious and I had some ricotta in the fridge that would be thrown away if it was not used.  We also always have oranges on hand so I thought I would give them a try.  Man, these muffins were so good!  I was honestly surprised!  They were light a fluffy, flavorful, and the kids liked them too! Here is the recipe.


Orange Ricotta Muffins

1 3/4 c. flour

3/4 c. sugar

2 1/2 t. baking powder

1/4 t. salt

3/4 c. ricotta cheese

1/2 c. water

1/4 vegetable or canola oil

zest of one orange

juice from one orange (at least 2 tablespoons)

1 large egg, slightly beaten

Preheat oven to 375 degrees.  Line a muffin pan with liners or spray with cooking spray/oil.

In a large bowl mix together the flour, sugar, baking powder, and salt.  In another bowl mix together the ricotta cheese, water, oil, orange zest and orange juice.  Combine the wet ingredients into the dry ingredients.

Scoop about 1/3 cup of batter into each muffin liner.  Bake 16 minutes.  Cool.  Eat up!!

Recipe Boy’s site says it makes 12 muffins but I think mine made 14 or 15.   I can’t remember exactly.
