What I Ate: Three Cheese Baked Penne

Tonight we ate some good, comforting pasta.  If you don’t live in Arkansas then let me tell you about the weather this week.  It is COLD.  It has been in the low 30’s but the “feels like” temperature is in the mid-twenties.  It doesn’t snow, the sun doesn’t come out, it’s just cold!   So a pasta bake was an excellent choice for dinner.  Let me tell you how to make this delicious pasta bake.

Three-Cheese Baked Pasta

based on a Cooking Light recipe

16 oz. uncooked whole wheat penne

8 oz sweet italian sausage

1 green bell pepper, chopped

2 t. dried italian seasoning

(1 t. crushed red pepper)

black pepper

1 carton of grape tomatoes, halved

1 garlic clove, minced

16 oz tomato sauce

1 c. mozzarella cheese

6 oz crumbled goat cheese

1/2 c. shredded parmesan cheese

-the crushed red pepper is delicious but if you or your kids don’t like spicy stuff then leave it out

Preheat oven to 350 degrees.  Cook pasta according to directions.

Heat a large skillet over medium-high heat and cook sausage.  Add bell pepper and cook.  Then add the next six ingredients to pan and saute.  Stir in tomato sauce.  Reduce heat and simmer for five minutes.  Add pasta to the pan and toss gently.  Take off heat and add cheeses.  Then pour into a sprayed 9×13 casserole dish.  Bake at 350 degrees for 10 minutes.

Yumm!!! Eat up!

I cooked mine longer because I made the pasta bake during nap.  Just a side-note, I always prep dinner during nap time.  I do as much as I can during nap so I don’t have to do much of anything once the kids are awake.  It makes life easier for everyone in this family.
