Brownies with a little bit of Caramel

I made brownies this week.  Hadley and I had talked about making brownies for her teachers at school so on Tuesday she went to school and told her teachers we were making them brownies.  So now we had to make brownies for real.  Wednesday night Hadley and I set out to make brownies but since I can’t do anything plain I had to add a little bit of caramel not that these gooey brownies needed any help in the taste department.  I was originally going to make this exact recipe from Cookies and Cups (love her blog), but it got switched around some based on ingredients I had/didn’t have.  Here is the recipe.

Brownies with A Little Bit of Caramel

1 1/4 c. flour

1 t kosher salt

2 T cocoa powder

12 oz dark chocolate (I used the chips but you could use the bars or whatever)

1 c. butter

1 1/2 c. sugar

1/2 c. brown sugar

5 eggs

2 t. vanilla

caramel squares (however many you have on hand, me? about 15)

splash of heavy cream (2 T)

Preheat the oven to 350 degrees and prepare a 9×13 pan by spraying it with cooking spray.

In a medium bowl whisk together flour, salt and cocoa powder.  Set aside.

Over a double broiler (or in the microwave) melt together the butter and the dark chocolate.  Stir occasionally until it all melts together.  Remove from heat and whisk in both sugars until combined.  Next whisk in the eggs and vanilla until combined.  Pour the flour mixture into the chocolate mixture and fold in with a spatula and mix until incorporated.

Pour half the batter into the prepared dish and spread out with a spatula.  Then melt the caramel and heavy cream together in microwave (30 second increments) until melted and pour that over the brownie batter.  Then add the rest of the brownie batter on top of the caramel sauce.  Spread the rest of the brownie batter over the caramel sauce with a spatula.  Keep the caramel sauce contained within the brownie batter (meaning, don’t let it ooze out the sides).

Bake for 30 minutes or until center is set when tested with a toothpick.  Allow brownies to cool completely before cutting.

*I tried to cut them that night after a couple of hours and they fell APART but when I tried again the next morning they stayed together much better.

** Also, I used caramels because I needed to use them but you can either buy a caramel sauce make your own.  Whichever, all would be yummy!
