Pepper Jelly and Class Photo

People like to give pepper jelly.  At least people like to give me pepper jelly.  One problem, I don’t know what to do with it.  I know you can pour it over cream cheese and serve it with crackers but I don’t really like that.  So instead I have like four or five jars of mostly homemade pepper jelly in my pantry.  Well luckily one person who gave us pepper jelly at Christmas gave us a recipe to use with it too.  We tried it out last night and I was surprised how good and easy it was.  I didn’t take a picture because honestly I didn’t have high expectations.  I am sorry.  Here is the recipe though.

4 boneless chicken breasts

3/4 t salt

1 t garlic powder

1 t chili powder

1/2 t black pepper

1 t cumin

1 1/2 dried oregano

2 T veggie oil

3/4 c. chicken broth

1/3 c. balsamic vinegar

4 T pepper jelly

Directions:

Place breast in a big ziplock or plastic wrap and pound to 1/4 inch thickness.

Combine all the seasonings and sprinkle onto chicken, both sides.  Heat oil in large skillet over medium high heat.  Cook chicken 3-4 minutes on each side or until done.  Transfer to a platter and keep warm.  Then add broth, vinegar, and jelly to skillet, cook 5 minutes or until somewhat cooked down to a bit thinner than syrup, stirring occasionally.  Spoon sauce over chicken and serve.

This was delicious.

I served it with these sweet potatoes, which were also delicious.

Another thing just for fun.  Hadley’s class picture last semester.  Her class has changed quiet a bit over the last couple of weeks.  One girl left her class and quiet a few more joined.  One of her teachers left and she has gained a new one.  Hadley is normally a very smiley girl and loves getting her picture taken…who knows what was up this day.  This face was the face on all her pictures.  Also, if you notice her BFF, Charlie (www.evolvedmommy.com, daughter) and Hadley are wearing the same shirt.  Styling.  Enjoy!
